How to Keep Peeled Potatoes White for Mashing
- 1). Place water in your cooking pot until it is half full. This is not the water you will be using to cook your potatoes, so you do not need to add anything to the water.
- 2). Peel the potatoes. As you peel them, place them in the cooking pot. This will rinse the potatoes and begin removing the starch.
- 3). Cut your potatoes once you have all of them peeled. Pull them out of the pot one at a time, cut them and place the cut pieces back in the water. While it is not necessary to peel all of the potatoes before cutting them, you will save cooking time by cooking smaller pieces.
- 4). Place the colander in the sink and dump the potatoes into the colander. Once the water has drained, quickly rinse the potatoes.
- 5). Place the potatoes back in the pot and cover with water. Place your pot in the refrigerator for 30 minutes to remove more of the starch.
- 6). Pour the potatoes and the water into the colander again and rinse the potatoes. The goal of the repeated soaking and rinsing is to remove enough of the starch that the potatoes will stay white during cooking.
- 7). Place the potatoes in the pot and cook until the potatoes are tender.
- 8). Rinse the potatoes prior to mashing to remove any remaining starch.
