Foods to Fight Winter Blues and Some Heart Warming Chili
I thought it would be relevant to mention the freezing cold temperatures outside and share with you a recipe that is literally heart warming: Veggie Bean Chili - I created this one on my own and have shared it with my friends and family - with compliments every time.
It's kid friendly too, one of my daughter's favorites! Kids actually love to help in the kitchen and rinsing beans is something safe and simple they can do.
VEGGIE BEAN CHILI Ingredients: Four 15-ounce cans of a medley of your favorite beans, like kidney, navy, pinto, or chickpeas 2 tablespoons extra-virgin olive oil 2 large onions, diced ½ of each yellow and orange sweet peppers Handful of chopped broccoli and/or cauliflower 1 tablespoon chili powder, or to taste 1 tablespoon dried whole oregano 1 tablespoon ground cumin 1/2 teaspoon allspice 1 large can (28 ounces) crushed tomatoes, undrained 5 cloves garlic, mashed Salt and pepper, to taste Garnishes (optional): Chopped tomato Shredded lettuce Tortillas Instructions: 1.
Drain and rinse beans in a colander.

Heat oil in a large Dutch oven or saucepan.
Add the onions and garlic and sauté over medium heat until they are soft and golden.
3.
Add the peppers, broccoli, cauliflower, chili powder, oregano, cumin and allspice to the onions and garlic.
Cook for 2 minutes.
4.
Add the tomatoes and beans.
Simmer for 45 minutes, adding liquid if the mixture gets too dry.
5.
Add salt and pepper to taste, and more chili if you want a hotter dish.
6.
Serve in bowls with rounds of whole wheat baguette or multi grain nacho chips.
7.
Garnish with chopped tomato and shredded lettuce.
