    • 1). Place the paper liners into the muffin tins.

    • 2). Place the rolled oats in the food processor and process until it makes a flour. If you like a chewier texture, leave the oats bigger. Nuts are an optional addition and can be added at this stage if you do not want large pieces. If you want them to stay intact, add at a later step.

    • 3). Add the protein powder and pulse to mix well with the flour.

    • 4). Add the nut butter a small amount at a time, pulsing the food processors to mix after each addition. At the end you should have a dough similar to a cookie dough that holds together. If you wish to add optional dried fruit or nuts to the mix, add it last and give it a quick pulse to incorporate it.

    • 5). Divide the dough equally among the muffin cups.

    • 6). Place into the refrigerator and allow to harden.

    • 7). Fold the paper down around the diet protein bars and store in an air tight container in the refrigerator.
