Double Tomato Bruschetta Recipe

It is a wonderful summer appetizer prepared with ripe tomatoes that taste its best in the summer months. Bruschetta is an Italian snack, and since the 15th century, it can be traced in the history of Italian cuisine. It can be prepared with tomatoes, garlic and fresh basil leaves from your garden. Easy to cook and great to taste, this dish takes hardly 35 minutes to serve to the table.

Ingredients to prepare Double Tomato Bruschetta
Six chopped roma (plum) tomatoes
half cup of sun-dried tomatoes that are packed in oil
Three cloves of minced garlic
Olive oil – one fourth cup
Balsamic vinegar – two tablespoons
stems removed fresh basil – one fourth cup
salt – one fourth teaspoon
black pepper (ground)- 1/4 teaspoon
One French baguette
Two cups of mozzarella cheese, shredded

Method of Cooking
The first step to prepare this dish is on broiler setting, preheat the oven.
Mix all the ingredients such as roma tomatoes, garlic, olive oil, sun-dried tomatoes, vinegar, salt, basil and pepper in a large mixing bowl. Leave the mixture for 10 minutes to get the flavor.
Baguette should be cut into 3/4-inch slices. Spread the baguette slices in a single layer on a baking sheet. Until it gets slightly brown, Broil the spreads for around 1 to 2 minutes.
After broiling spread the tomato mixture uniformly over the broiled baguette slices. Use mozzarella cheese as toppings on the slices.
Broil again for around 5 minutes, or until the cheese melts.
According to your taste and region, the toppings might change. You can also add some variation if you want to make it taste more interesting. This will help you to serve around 12 guests. This will certainly be a huge hit among children and adults equally.
