How to Smoke Bay Scallops

    • 1). Wash the bay scallops thoroughly under water running, then dry each scallop by patting it with a paper towel.

    • 2). Fill the bottom of a smoke pan with wood chips then place over a burner on your stove.

    • 3). Place a metal grate over the wood chips inside the pan then scatter the scallops evenly over the grate.

    • 4). Cover the the smoke pan with the pan's top cover and turn the burner onto high heat. Cook over high heat for one minute.

    • 5). Reduce the heat to low on the burner and continue cooking the scallops for four more minutes.

    • 6). Remove the smoker from the burner and let the scallops cool down for about 10 minutes before serving.
