How to: Basil in the Freezer
- 1). Wash the basil leaves by holding them under warm running water for 30 seconds. Dry the leaves with paper towels.
- 2). Cut the leaves off of a sprig of fresh basil. Discard the stems.
- 3). Place the leaves of basil in a single flat layer on a wire baker's rack. Position the rack in a warm, dry place. Allow the basil to dry for approximately three days or until the leaves are brittle.
- 4). Add the whole leaves to a quart size freezer bag. Remove any excess air and seal the bag.
- 5). Chop the leaves, if desired, and add them to a clean ice tray. Pour water up to the tops of the chopped basil, just to cover. Freeze the basil and transfer the cubes to a quart size freezer bag.
- 6). Use the whole basil by removing from the freezer and adding whole or crushed to a dish. Alternatively, add the basil ice cubes to mixed drinks, soups or stews.
