Dilled Onion Waffle Appetizers with Crayfish

In Sweden, August is the season for crayfish parties - the critters (typically imported from abroad since disease decimated the native crayfish population decades ago - are boiled with dill heads and typically enjoyed with cold beer and Västerbotten Pie. Here, the complementary flavors of fresh crayfish, dill, and Västerbotten cheese combine in an orginal summer appetizer. You can substitute langoustines or even Dungeness crab (use the pincer meat) in this recipe if you don't have access to crayfish. Makes approximately 30 appetizer if you are using a heart-shaped waffle iron (otherwise, divide the cooked waffles into 5 equal pieces).

Ingredients
  • 2 cups all-purpose flour
  • 1 Tbsp. baking powder
  • 1/2 tsp. salt
  • 1 Tbsp. fresh dill, finely chopped
  • ½ tsp. dill seed
  • 2 Tbsp. red onion, finely chopped
  • 1 3/4 cups milk
  • 6 Tbsp. melted butter, cooled to room temperature
  • 1 1/2 cups shredded Västerbotten cheese (or substitute Parmesan)
  • 2 eggs, separated
  • 1 cup butter, softened
  • 2 tsp. fresh dill, chopped
  • Zest and juice of 1 small lemon
  • 30 crayfish tails, boiled

  • Prep Time: 45 minutes
  • Cook Time: 5 minutes


  • Total Time: 50 minutes
  • Yield: 30 appetizers


Preparation

In a large mixing bowl, whisk together the flour, baking powder, salt, 1 Tbsp. chopped fresh dill, dill seed, and the chopped red onion.

Whisk together the milk and melted butter, then combine with the dry ingredients into a batter. Mix in the shredded Västerbotten cheese, then allow to rest at room temperature for 30 minutes.

While your batter rests, fold together the 1 cup softened butter, the remaining 2 tsp.

chopped dill, and the zest and juice of 1 lemon.

Heat your waffle iron according to the manufacturer's directions. Beat the egg whites until stiff peaks form. Stir the egg yolks into the batter, then gently fold the beaten egg whites into the mixture.

Bake on the waffle iron until golden and crispy. Transfer to a warm oven until all waffles have been baked.

To serve, separate each waffle into 5 equal portions, spread with the dilled lemon butter, and top with a crayfish tail.
