How Does a Lemon Squeezer Work?
- So many recipes are better with a "squeeze" of lemon juice that a good cook finds it useful to keep a lemon-squeezer within easy reach. Two kinds of squeezers cover most of a cook's needs: a dome-squeezer, surrounded by a slotted edging, and a two-handed scissor-style squeezer with perforated ends. Electric squeezer-juices are also available but are most useful when you need a large quantity of juice, enough for everyone's breakfast, for example.
- A dome-style squeezer is perfect for lemonade. Designed to balance on a cup or bowl, a dome-squeezer lets you rotate a lemon half on its top, while the juice drips down into the container. (Enlisting several children to get this done opens that lemonade-stand fast) Using a transparent container, like a glass mixing bowl or glass measuring cup, lets you monitor the amount of juice you will need. Continuing to press down while rotating the lemon-halves lets you get all the juice the lemon contains.
- For a small amount of lemon juice, cut a wedge from the fruit and extract the juice with a scissor-style squeezer. This is the perfect tool for the teaspoon you add to a cookie-recipe or the mysterious "squeeze" (usually a tablespoon or two) to cover baking fish-filets.
