How to Build a Smoker Pit
- 1). Soak a few handfuls of flavored wood chips in a bowl of water for 45 minutes.
- 2). Drill four holes in the lid of the trash can, 1/2-inch in diameter.
- 3). Drill a hole on the side, near the bottom of the trash can, large enough to fit the cord of the hot plate, approximately one inch in diameter.
- 4). Lay the single burner electric hot plate on the bottom of the trash can and pull the cord through the hole. Set the temperature of the burner to "high."
- 5). Place the soaked wood chips in the wood chip box. Both flavored wood chips and a wood chip box can be purchased at any home goods store or at online retailers. Place the box on top of the hot plate.
- 6). Insert the round grill grate into the trash can, near the opening. Ideally, the grill grate should be one inch smaller than the circumference of the trash can so it rests near the top. It should rest at least four inches down from the opening.
- 7). Plug in the electric hot plate. If the cord of the hot plate will not reach an outdoor outlet, you can attach an extension cord.
- 8). Cover the trash can with its lid and insert the metal temperature gauge into one of the holes on the lid. Wait for the wood chips to begin to smoke and for the temperature to reach at least 250 degrees Fahrenheit.
- 9). Remove the lid of the trash can once the temperature rises and arrange food on top of the grate. Cover with lid. Keep an eye on the temperature gauge while smoking the food to ensure the temperature stays under 275 degrees Fahrenheit, ideally 250 degrees Fahrenheit. If the temperature ever rises over 275 degrees remove the lid until it's back within the desired range.

Cook the food for three to five hours.
