Essen und Trinken is a popular food magazine in Germany with a great online presence full of recipes and videos. In order to link to the demonstration video here describing how to make classic short dough, I have translated the spoken word. Here is a script in English of what the baker is saying.

Sweet Mürbeteig Video Transcript
"I will now make the classic Mürbeteig based on the 1-2-3 recipe, which means 1 part sugar, 2 parts butter, 3 parts flour [by weight].
The butter should be cold, so should your hands.
Then an egg is added. And then the three parts flour.
The dough should be kneaded for as short a time as possible, so that it does not become crumbly afterwards.
When kneading, work with the palms of your hands, not your fingers.
Form the dough into a flat brick and wrap in plastic foil.
Then cool the dough for a quarter to a half an hour.
The Mürbeteig is now well cooled.
Lightly flour the work surface.
Knead the dough a bit, so make it more workable and smooth for rolling out.
Carefully roll out the dough from the middle towards the outside. Always pick the dough up a little and move it to keep it from sticking.
Here is a springform pan and I will cut a circle out with it. From the rest of the dough I will roll out the sides of the crust.
I cut a narrow strip that I will place directly in the pan. If it is hard to pick up, cut the strip shorter.
This crust can be used for all types of cheesecakes, apple cakes and apple tarts.
I knead the rest of the dough and cut cookies for Christmas or the coffee table.
If I roll out the Mürbeteig too often and add too much flour it will become crumbly and looks like this. Then the dough does not roll out well. You can save it by mixing a little milk into the dough. When that does not work then you can add a little sugar to the dough and use it as streusel for the apple cake."

- 300 grams flour
