Video: How to Make Crispy Chicken Breast Burgers

Hi, I'm Chef Laura Hahn, chef and blogger for Guilt Free Foodie Cutie. I'm here today at Green's Grove Incubator Kitchen in Philadelphia, Pennsylvania. I'm going to show you how to make crispy chicken breast burgers. So, in this bowl, I have some chicken breasts that we put through a food processor and made ground chicken out of. If you have a great butcher at home, really simple, just ask them to take the chicken breast and throw it through the grinder. So, you're going to put this aside and now, let me show you everything that's going to go inside of it. We have our chipotle chicken seasoning, you can use anything here, you can use any blend that you have, garlic powder, whatever you want. We have pepper, paprika, some sage, which to me, is like the trick seasoning to any chicken burger. Salt, onion powder, I have some fresh onions that have been minced and then, gluten-free bread crumbs. You need something to bind that chicken together, o.k. Now, I'm making you about one portion size, one really, really big burger. So, you can add more to this, if you're going to make it for more people. I'm also going to use some soy sauce, this is not going to give it an Asian flair at all, it just adds a little bit more to the element of the chicken. You've got to spice it up a little bit, you are doing a chicken burger. So, let's get started. Now, with the chicken breast, we're going to add one tablespoon of sage, it's so good, I promise you, you won't believe how it comes out. One teaspoon of paprika, one teaspoon of pepper, I'm going to use a pinch of our poultry seasoning, put that aside. Our minced onions, these will get caramelized while you're cooking it, and it'll really add a nice flavor and texture to your burger. I'm going to add a pinch of your salt, a little bit more, o.k., a little bit of your onion powder. O.k., now, give that a stir. O.k., now, add your soy sauce, not a lot at all, about a half a tablespoon, o.k., man, that soy sauce, the smell of it really, really adds to this. O.k. it's starting to get some color and now, you add your bread crumbs. This is about a quarter of a cup, I'm going to use half of it, for this size portion. These are obviously gluten-free bread crumbs, but you can use anything that you want. Another trick is Parmesan cheese, you can do half Parm cheese and half bread crumbs. Give it more like oregano and Italian seasonings, go to town with flavor in your chicken burger. Just keeping this nice and simple, so you get the idea. O.k., now, take your meat, I'm going to make two small burgers for you, so you get the idea of what it would look like. Take it in your hand and I know, it's chicken, you don't want to touch it, but you kind of have to make a patty out of this. O.k., it looks just like that, beautiful patty. Right now, I have on my pan, a little bit of olive oil and the pan is on, so it's hot. So, when I put this chicken on, it's going to sear really quick. Now that olive oil is going to add that crispiness that we're looking for. That's it, so let your chicken cook until it's done, make sure that it's completely cooked inside. I've already plated one for you, it looks just like that. It can't get more simple than this. And really, feel free to go crazy, add cheese, add seasonings, add caramelized onions, and peppers, whatever you want.
