    • 1). Agave nectar is sweeter than both honey and sugar. However, it has a mild, subtle taste that when used as a sweetener, brings out the flavor of many beverages such as coffee and tea. Many people want to know how to use agave nectar when preparing baked goods. Because agave nectar is sweeter than other sweeteners, when substituting it for sugar in recipes, for each full cup of granulated white or brown sugar that the recipe would normally call for, you should use 2/3 cup of agave nectar.

    • 2). You also may need to adjust the amount of liquids used in the recipes because of the added liquid from the agave nectar. For every cup of any liquid required in a recipe, reduce it by 1/4 cup when using agave nectar. For example, if a recipe recommends a cup of milk, use 3/4 cup instead. However, because the moisture content of brown sugar is higher than that of white sugar, liquids may not have to be reduced as much when substituting with agave nectar. You might have to experiment a couple of times to get the desired consistency and results.

    • 3). Keep in mind that since agave nectar causes baked goods to brown more quickly, you should adjust oven temperatures to accommodate the substitution. Reduce the normal oven temperature by 25 degrees Fahrenheit, and add a few extra minutes of cooking time, but do not add more than 10 percent of the total time.

    • 4). Although the focus of this article is to provide information on substituting sugar with agave nectar, it might be helpful to note that when replacing either maple syrup or traditional honey with agave, the same amount should be used.
